Ingredients

  • 6 chicken thighs (I used bone in, skin removed)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 2 large potatoes, cut into bite sized pieces
  • 1 onion, diced
  • 8 garlic cloves, minced
  • 1 teaspoons paprika
  • 1/2 teaspoon oregano
  • 1 cup chicken broth
  • 3 tablespoons lemon juice
  • 4 tablespoons butter

Directions

Preheat oven to 400°.

Combine paprika, onion powder, garlic powder, and oregano in a small bowl.

Season chicken on both sides with salt and pepper and sprinkle over seasoning.

Heat oil in a pan over medium high heat and sear chicken smooth side down for 4 minutes. Flip chicken over and cook for another 3 minutes. Remove and set aside.

Add more oil to the pan and sauté potatoes, onions, and garlic for 5 minutes over medium heat seasoning with salt and pepper.

Stir in paprika and oregano.

Add chicken broth and lemon juice.

Season with salt and pepper and bring to a boil.

Add chicken back to the pan along with butter slices.

Transfer to the oven and bake for 30-35 minutes.
