Today I have a recipe for a delicious Christmas gingerbread cake. Yes, I know, there’s still some time left until Christmas, but I know that many people like to plan it in advance. To make this cake, you can use a special Christmas tree-shaped mold, it is easy to purchase online. I think that by adding this recipe now, you will have plenty of time to buy such a mold. It is possible to bake it in traditional flute form, it will not detract from its taste.

Ingredients:

  • 3 eggs
  • 200 g of brown sugar
  • pinch of salt
  • 200 g of butter
  • 2 teaspoons of gingerbread spice
  • 250 ml of Greek yogurt
  • juice of 1/2 orange
  • grated peel from one orange
  • 250 g of wheat flour
  • 2 tablespoons of cocoa
  • 5 teaspoons of baking powder
  • powdered sugar for sprinkling
  • oil to grease the form

Execution:

Crack the eggs into a bowl, add a pinch of salt and beat with sugar until fluffy.

Slowly add butter to the beaten eggs, stirring constantly. Then add yogurt, gingerbread spice, grated zest and orange juice. Mix everything well.

Then sift the flour, cocoa and baking powder into a bowl. Mix gently with a spatula.

Then pour the prepared dough into a form, I used a Christmas tree-shaped form. Grease the form with oil or butter and sprinkle it with cocoa.

Bake the cake at 180 degrees C, using the top-bottom oven function. Bake, depending on the oven power, for 40-50 minutes, until the stick is dry.

Remove the cake from the oven and cool in the tin. Before removing from the tin, cut/level the bottom of the cake so that it stands stably on the cake stand. Sprinkle the cooled cake with powdered sugar.
